Oats Uttapam

The south India delicacy, Uttama, a thick pancake normally made from rice flour to which onions, tomatoes, chillies, and other vegetables are added during cooking.

At By Nature, we have made this traditional dish much more healthy by using Rolled Oats instead of rice.

INGREDIENTS

Rolled oats
100 g
Rava
50 g
Curd
75 g
Lemon
1 No
Baking soda
1/2 tbsp
Chopped Onion, Tomato, beans
50 g each
Chopped Green chillies
15 g
Grated Carrot
50 g
Fresh coriander
25 g
Mustard seeds
1 tbsp
Curry leaves
5 g
Hing
5 g
Oil
15 ml
Salt
to taste

DIRECTIONS

Put the oats and rava in a blender and make into a fine powder.

Take this powder in a bowl and add curd, salt, lemon juice and baking soda to it and make a thick batter. Adjust the consistency of the batter by adding little water. The batter should be spreadable

Rest this batter for 5-10 minutes.

Mix all the chopped veggies together.

Heat little oil in a pan and crackle mustard seeds in it. Add hing and curry leaves. Add this tadka to the batter and mix properly.

Heat a pan and add little oil.

Pour batter with a ladle and spread a but if needed.

Top with mix vegetables and press gently with a spatula.

When it is cooked on one side, flip it over and cook on the other side as well.

Serve with coconut chutney and/or sambhar.
